Ingredients
 

  • 2 sticks butter, softened (16 tablespoons)
  • 1 cup light brown sugar
  • 3/4 cup granulated sugar
  • 1.5 cup canned pumpkin
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 2.5 cup all-purpose flour (300g)
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350℉.
  • First, cream the butter with the sugars. Then, add in the egg, pumpkin and vanilla. In a separate bowl, add in the flour, pumpkin spice, salt, baking powder, cornstarch and baking soda. Combine the dry and wet ingredients. Lastly, fold in the white chocolate chips.
  • Spread the pumpkin blondies in the baking pan. Then, place in the oven for 35-45 minutes. Times will vary when you can insert a toothpick in the center and it comes out clean.
  • When finished, allow the blondies to rest for a 15-20 minutes. You can serve them warm but they'll be the chewiest when completely cooled, enjoy.
