Pumpkin Banana Muffins

Ingredients
 

  • 1 cup ripe bananas, mashed
  • 1 cup canned pumpkin
  • 3/4 cup granulate sugar
  • 6 tablespoon butter, melted
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 1.5 cup all-purpose flour (205g)
  • 1 tablespoon pumpkin spice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions
 

  • Preheat the oven to 400℉.
  • Mash the bananas in a bowl, then add in the canned pumpkin, sugar, vanilla and butter. Once all is combined, beat in the egg. In a separate bowl, toss in the flour, pumpkin spice, baking soda and salt. Combine the dry and wet ingredients. After, if you'd like to fold in nuts, chocolate chip or whatever you'd like this is the time.
  • Scoop the batter into a muffin pan with liners. Leave a small space at the top to allow the muffins to rise. Place in the oven for 12-15 minutes or until a toothpick can be inserted and come out clean. 
  • Once the pumpkin banana muffins are done baking, allow them to cool at least 15 minutes before serving.
