Ingredients
 

  • 2 cup mashed potatoes
  • 2 large egg
  • 2 tablespoon butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt (add more to taste, if needed)
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese

Instructions
 

  • Turn the waffle iron on hot to allow it to heat while making the potato waffle batter.
  • In a bowl, mix together the mashed potatoes and the eggs with a hand mixer. Add in the melted butter, flour and the seasonings. The batter will be thick. Now, fold in the shredded cheese.
  • Make sure the waffles iron is super hot, spray with oil then add in some of the waffle batter. Cook until golden brown and crispy.
  • This recipe makes about 3-4 waffles depending on the size.
  • Serve quickly while the waffle is crispy but be careful because it'll be hot.
