Peach muffins are a great pairing with any breakfast during the summer months when peaches are at their sweetest. They are simple and feature a crumble, crunchy topping!
In a bowl, combine the flour, baking powder and salt together. In another bowl, whisk the eggs, oil, milk, vanilla and the sugar together.
Combine the dry and wet ingredients together then fold in the chopped peaches.
Spoon the batter into a lined muffin pan. Next, make the crumble topping, it's optional. But, combine the ingredients and it is easiest to use a pastry cutter to make the crumbles with the mix. Once the crumbles are made, top the muffin batter in each liner with the crumbles.
Place the muffin pan in the oven and bake for 15-20 minutes or until the muffins have risen and are cooked through.
Remove from the oven and allow the muffins to cool before serving, enjoy.
