Peach Muffins

Peach muffins are a great pairing with any breakfast during the summer months when peaches are at their sweetest. They are simple and feature a crumble, crunchy topping!

Ingredients

  • 1 cup peaches, chopped about 2 peaches
  • 1.5 cup all-purpose flour 195g
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1/3 cup milk
  • 1 teaspoon vanilla extract

Topping (optional)

  • 1/2 cup all-purpose flour
  • 3 tablespoon light brown sugar
  • 3 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon
  • 4 tablespoon cold butter

Instructions

  • To start, preheat the oven to 400℉.
  • Prep the peaches before making the batter.
  • In a bowl, combine the flour, baking powder and salt together. In another bowl, whisk the eggs, oil, milk, vanilla and the sugar together.
  • Combine the dry and wet ingredients together then fold in the chopped peaches.
  • Spoon the batter into a lined muffin pan. Next, make the crumble topping, it's optional. But, combine the ingredients and it is easiest to use a pastry cutter to make the crumbles with the mix. Once the crumbles are made, top the muffin batter in each liner with the crumbles.
  • Place the muffin pan in the oven and bake for 15-20 minutes or until the muffins have risen and are cooked through.
  • Remove from the oven and allow the muffins to cool before serving, enjoy.
