Parmesan Crusted Cod

Parmesan crusted cod with a crispy, nutty crust on top of flaky fish. It's the perfect combination and it's baked and ready in under 30 minutes.

Ingredients

  • 3 filts cod

Parmesan crust

  • 2 tablespoon panko breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • olive oil or dijon mustard to coat fish
  • salt and pepper fish to taste

Instructions

  • First, thaw the fish. Then, when you're ready to cook preheat the oven to 400℉.
  • In a bowl, mix together the ingredients for the parmesan crust. Season the fish lightly with salt and pepper. Then, cover the top with oil or dijon mustard to help the crust stick.
  • Sprinkle the parmesan crust across the top of the fish. You can easily cover 2-3 pieces of fish with this recipe.
  • Now, place in the oven for 15-20 minutes. When the crust is golden the fish is ready. Fish always take 15-20 minutes to cook in the oven unless it's super thick. Luckily this is the same amount of time it takes the crust to brown.
  • Remove the parmesan crusted cod from the oven and allow to cool for 5 minutes. The crust will harden more, now enjoy.
