First, thaw the fish. Then, when you're ready to cook preheat the oven to 400℉.
In a bowl, mix together the ingredients for the parmesan crust. Season the fish lightly with salt and pepper. Then, cover the top with oil or dijon mustard to help the crust stick.
Sprinkle the parmesan crust across the top of the fish. You can easily cover 2-3 pieces of fish with this recipe.
Now, place in the oven for 15-20 minutes. When the crust is golden the fish is ready. Fish always take 15-20 minutes to cook in the oven unless it's super thick. Luckily this is the same amount of time it takes the crust to brown.
Remove the parmesan crusted cod from the oven and allow to cool for 5 minutes. The crust will harden more, now enjoy.
