Ingredients
 

  • 2.5 cup pancake mix
  • 2 tablespoon granulated sugar
  • 2 large egg
  • 4 tablespoon butter, melted
  • 2 teaspoon vanilla extract
  • 2.5 cup milk
  • 1 pound bacon, chopped
  • 1 pint fresh blueberries

Instructions
 

  • Preheat the oven to 350℉.
  • First, cook and chop the bacon. Also, toss the blueberries in 1/2 teaspoon of pancake mix so they don't sink to the bottom. If that's not important, no problem because that doesn't change the flavor at all.
  • In a bowl, whisk the eggs and gradually add in the butter while whisking. Now, whisk in the vanilla extract and the milk. In a separate bowl mix together the pancake mix and the sugar. Combine the dry and wet ingredients.
  • Next, fold in the blueberries and the bacon bits. Pour the batter into a baking dish.
  • Place in the oven for 35-45 minutes, times vary per oven. The pancake casserole is finished once you can insert a toothpick and it comes out clean from the center.
  • Allow to cool a bit then serve with maple syrup.
