Ingredients
 

  • 3/4 cup banana, mashed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 1.25 cup rolled oats
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup walnuts, chopped
  • 1/4 cup all-purpose flour (can skip, makes a stronger hold)

Instructions
 

  • Preheat the oven to 350℉.
  • In a large bowl, mash up the bananas and measure out 3/4 a cup. A little over or under is fine but stay close to 3/4. Next, whisk in the sugar, cinnamon and salt.
  • Then, add in the oat, walnuts, flour and dried cranberry. Fold everything together until an even cookie dough forms.
  • Take 2 cookies scoops into your hand and shape the cookie. Place the cookie onto a lined sheet pan. You'll need to shape the cookie yourself because they will not bake down or spread. Quick tip, you can make smaller cookies and get 18 cookies from the recipe.
  • Once all the cookies are made, place the pan in the oven for 10 minutes. Remove from the oven and allow the cookies to cool completely before handling them.
