Ingredients

  • 1 pound ground beef
  • 1/2 medium yellow onion, diced
  • 4 clove garlic, minced or pressed
  • 1/2 medium green bell pepper, diced
  • 1 pack taco seasoning
  • 1 cup black beans, drained & rinsed
  • 1 cup corn
  • 1 cup white rice, dry
  • 2 cup chicken broth
  • 1 cup shredded Mexican cheese

Instructions

  • To start, prep all of the ingredients.
  • In a deep pan or pot brown the ground beef. Once cooked remove the ground beef from the pan.
  • Next, add in the diced onion, green bell pepper and garlic. Cook until the veggies are soft, and onions are translucent.
  • Now, add the ground beef back into the dish.
  • Add in the corn, black beans, white rice and the taco seasoning then mix everything together. Now, slowly pour in the chicken broth.
  • Bring the broth to boil then lower to the lowest setting and cover the pan. Allow the rice to cook for 20 minutes. Once the rice is finished cooking, remove the lid and add the cheese on top and allow to melt before serving.
