This cabbage and bacon recipe features red wine vinegar and sweet cherry tomatoes Keto friendly bacon comes through crispy and delicious pairing with your dinner recipe.
1teaspooncoarse ground black pepper(use half the amount if using fine texture black pepper)
Instructions
cut cabbage into shreds, cut bacon up, slice garlic and cut tomatoes in half. See notes below on preparing cabbage
In a pan on medium high heat add cut up bacon, once fat starts to release add in tomatoes and garlic
Cook until bacon is crisp plus garlic and tomatoes are nicely colored. That won't be an issue by the time the bacon finishes
When bacon is almost finish toss in red wine vinegar. Mix in with your bacon, tomatoes and garlic
toss in shredded cabbage, olive oil, salt and pepper. Continue cooking for another 3-5 minutes depending on how you choose to prepare your cabbage.
Remove from heat and serve

Two ways to prepare cabbage
Steam- This is my preferred way. It releases most of the water and allows the cabbage to already be somewhat withered and done. You don't want to steam it so long where it looses it's crunch because adding it into the pan will cook it slightly more depending on how long you leave it in.
Pan fry- Here you simply cut the cabbage up and toss in into the pan at step 5. The cabbage will have to be cooked completely through this method inside the pan. Releasing water into the pan as well. So a tip is to add the cabbage, cook it to desired tenderness. Water will be released in dish and will provide a different mouth feel from where if you'd steamed it in the beginning.
