Keto Peanut Butter Mousse

Ingredients

  • 1 cup heavy cream
  • 1/2 cup sugar free peanut butter
  • 1/4 cup sour cream
  • 1/2 cup powdered sweetener
  • 1 tablespoon vanilla extract
  • 1/2 tablespoon gelatin or 1.5 tsp
  • 1 tablespoon cold water

Instructions

  • Bloom gelatin in cold water by adding powder to small bowl and adding the water on top. Give a short whisk then set aside.
  • With a hand mixer blend peanut butter and sweetener together. Place gelatin in microwave for a maximum of 10 seconds. Add vanilla extract, sour cream and melted gelatin into peanut butter then mix until smooth.
  • In a seperate bowl blend heavy cream until it forms stiff peaks
  • Spoon peanut butter into the fluffy heavy cream and blend on a very low speed until combined. Scape sides and if any mousse hasnt mixed just fold it in.

Notes

Helpful Recipe Tips

  • Don't overheat gelatin. Ten seconds is the max you don't want to melt your heavy cream when added.
  • Sub almond butter for peanut butter? Sure, go for it! Any nut butter will work well in this recipe.
  • Add chocolate, whipped cream or both to really bump up the recipe. Chocolate and peanut butter will always be classics.
