Keto Egg Salad

Keto egg salad is one of the best recipes to ever make on a low carb diet. Eggs are a known superfood packed with nutrition. In an egg salad you get all the health benefits of the egg along with an healthy mayo with omega 3's from avocado oil. This makes a great side dish or even a quick meal prep idea for those on the go! Only 1g net carbs per serving!

Ingredients

  • 7 large eggs
  • 1/4 cup mayo
  • 1 teaspoon mustard
  • 2 tablespoon dill relish
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Boil eggs and peel
  • In a small bowl add mayo and mustard in eggs then stir
  • Toss in relsih, salt and pepper. Stir again
  • Serve. For additional flavor chop up 2 slices of bacon and add in

Helpful Recipe Tips

  • A tip for boiling eggs. I allow the water to boil first and regardless of how many eggs you use I always cook 10 minutes. No longer or shorter! I then immediately put the eggs in cool water for 5 minutes then peel. They'll be so easy to peel and come out whole. The egg yolks sometimes are on the medium well side but that's not an issue at all.
  • I suggest avocado oil mayo only. Avoid a mayo made with soybean, canola or vegetable oil.
  • Add in bacon for extra flavor. I feel nothing is more keto than a little bacon in your meal.
