Boil a pot of water and add frozen spinach. Cook about 5 minutes to thaw the spinach. Drain and press the excess water from the spinach. This is important, really squeeze that water out either in a strainer or with paper towels.
In a empty pot on medium heat add butter, then cook shallots and minced garlic together. Cook until golden and fragrant.
Pour in heavy cream, then add parmesan cheese, mozzarella and gouda.
Continue stirring until everything is melted and smooth. Then add in spinach and remove from heat. Now season the creamed spinach and taste. You may need more or less salt. Serve.
