Ingredients
 

  • 2 salmon fillets
  • salt & pepper to taste
  • dijon mustard or mayo to help crust stick

Herb crust

  • 1/4 cup plain Japanese panko
  • 1 tablespoon grated parmesan
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh dill, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 2 tablespoon butter, melted

Instructions
 

  • Preheat the oven to 375℉.
  • Next, chop up all the herbs finely. Then, mix together all the ingredients for the crust. Allow the mix to sit a little and allow the breadcrumbs to absorb the butter.
  • Now, lightly season the salmon fillets with salt and pepper. Spread a little dijon mustard or mayo across the top to help the crust stick.
  • Add the herb crust to the tops of the salmon fillets. You can do 2 normal salmon fillets or 3 small ones.
  • Place in the preheated oven and bake for 20 minutes or until crust is golden.
  • Remove and allow to cool for 5 minutes so that the crust gets crispy then serve.
