  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2-3 ribs celery, chopped (depending on size how many ribs you use)
  • 8 ounces frozen carrots
  • 1 tablespoon Italian seasoning
  • 8 ounces rotini pasta, uncooked
  • 4 cups chicken broth
  • 2 cups water
  • 1 lemon, juiced
  • salt & pepper to taste

Instructions

  • First, dice the onion and chop the celery. Then in a large pot on medium high heat add a little oil then cook the ground turkey.
  • Right before the ground turkey is almost finished cooking add in the garlic, celery and diced onions. Season with Italian seasoning, salt and black pepper.
  • Continue cooking until the turkey is finished cooking and the garlic and onions have become fragrant.
  • Now, add in the frozen carrots then pour in the chicken broth and water.
  • Bring the pot to boil. Once the pot is boiling add in the pasta and lower the heat a little so that the soup isn't boiling strongly. Continue boiling for about 12 minutes too allow the pasta to cook.
  • Once the pasta is down add in freshly squeezed lemon juice then add salt and pepper to taste before serving.
