First, prep all of the ingredients before starting. You'll need a pot or pan with a lid.
Now, in the pan add a little oil and sear the sausage and chopped bacon on medium high heat. Once you have seared the sausage and cooked the bacon remove it from the pan. The spots left in the bottom should be brown or golden in color. If you see a bunch of black streaks in the pan you are cooking too hot.
Then, add in the diced shallot and minced garlic with a little oil. Season lightly with salt and black pepper. Now, cook until the shallot has softened and everything is fragrant.
Lower the pan to medium heat and add in the chopped cabbage. Add more oil for the bottom of the pan then cover the pan with a lid.
Stir the cabbage often, this is the process of frying because the bottom of the pan does not have liquid. Add more oil anytime you stir and notice the bottom of the pan is dry.
The cabbage will steam down after about 15 minutes covered. You can cook more if you desire more tender cabbage.
When the cabbage is almost done add in the sausage and bacon back into the pan. Cook another 3-5 minutes then remove from heat.
Lastly, add in butter then season to taste with salt and pepper. Allow to cool a bit before serving and enjoy.
