15ouncecan of corn, drained & rinsed(sub with 1 cup frozen or fresh)
24 ozcan of green chilies, drained & rinsed
215 ozcan of white beans, drained & rinsed
1tablespoon minced garlic
1.5teaspooncumin
1/2teaspoonoregano
1/2teaspoonpaprika
1cupchicken broth
1cupsour cream
salt & pepper to taste
Instructions
First, add the chicken into crockpot. Then, add in the corn, green chilies, minced garlic and beans. Sprinkle the seasonings across the top then pour the chicken broth over everything. It'll look like there isn't enough liquid but everything will release extra water into the crockpot while cooking. Note, if you want a more soupy like chili, add an extra cup of broth.
Put the lid on the crockpot and cook on high for 3 hours or low for 6 hours, be sure to give the veggies a stir about halfway through.
When the time is up, remove the chicken then shred and chop it up. Add the chicken back into the crockpot the stir in the sour cream.
Taste for salt and pepper then serve with lime and garnishing of chopped cilantro.
