Ingredients

  • 1 pound lean ground turkey
  • 2 15 oz can of kidney beans, drained & rinsed
  • 15 ounce can of corn, drained & rinsed
  • 15 ounce can of diced tomatoes, drained & rinsed
  • 1 medium red bell pepper, diced
  • 1 medium yellow onion, diced
  • 3/4 cup chicken broth
  • 2.5 tablespoon chili powder
  • 2 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 cup cilantro, chopped
  • 1/2 lime, squeezed
  • salt and pepper to taste

Instructions

  • To start, brown the ground turkey in a pan then add it into the slow cooker. Tip, you can sauté the onions and bell pepper after cooking the turkey for a deeper flavor, but this is a step that can be skipped.
  • After adding the ground turkey into the slow cooker, add in the onion, bell pepper, tomatoes, kidney beans and the spices. Then, pour the chicken broth over everything and give it a good stir. Note, it may seem like there isn't enough liquid but allow it to cook. The vegetables will release water and it'll end up the consistency you see in the photos.
  • Cook on high for 3-4 hour or low for 6 hours. When finished, add in the chopped cilantro and squeeze a lime into the chili. Taste for salt and pepper then serve, enjoy!
