Ingredients
 

  • 1 pound ground beef
  • 1 can Rotel tomatoes & green chilies, drained & rinsed
  • 1 package taco seasoning
  • 1 package frozen shredded hash browns, thawed
  • 10 ounce cheddar cheese soup
  • 2 cup shredded Mexican cheese

Instructions
 

  • First, you’ll need to brown the ground beef in a pan. Add in the taco seasoning and follow the instructions on the package for proper preparation.
  • Next, take the cooked taco meat and add it to the crockpot.
  • Now add the thawed potatoes, cheddar cheese soup and Rotel to the crockpot. Mix everything together. Add the lid to the crockpot then cook on high for 3 hours.
  • At the 3-hour mark add half the cheese in then mix. Top the casserole with the rest of the cheese and put the lid on to allow it to melt.
  • Once the cheese has melted you can serve. Be careful because the insides will be extremely hot.
