Crockpot Frito Pie

Crockpot frito pie is a mix of casserole and chili with ground beef, beans, veggies then topped with cheese and crunchy Fritos corn chips. All in the slow cooker!

Ingredients
 

  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 15 ounce can of tomato sauce
  • 1 pack taco seasoning
  • 1 can Rotel tomatoes & green chilies, drained & rinsed
  • 15 ounce can of kidney beans, drained & rinsed
  • 15 ounce can of corn, drained & rinsed
  • 2 cup shredded Mexican cheese
  • 2 cup Fritos corn chips

Instructions
 

  • To start, you'll need to brown the ground beef then add in the tomato sauce, onion and taco seasoning. Allow to simmer about 3-5 minutes before transferring to the crockpot.
  • Next, in the crockpot, mix in the kidney beans, corn, Rotel, and a cup of the cheese. Put the lid on the crockpot and allow to cook on high for 3-4 hours hours.
  • Now when the time is up, add the rest of the cheese across the top. Then, place the Fritos corn chips across the top as well.
  • Quick tip, you can cover to speed up the process but some of the chips may loose some of their crunch. Leaving the top off the cheese will still melt just a little slower but the recipe is finished once you add the chips. You're only waiting for the cheese to melt.
