To start, prep all the veggies. Empty the corn into the crockpot. Then add in the seasonings. Toss in the celery, potatoes and onion as well.
Pour in the chicken broth then stir everything together. Cook those ingredients on high for 3 hours.
The last hour mix the cornstarch and evaporated milk together to make a slurry then pour it into the recipe. Stir it in and comeback and stir in another 30 minutes.
Before serving, cook the bacon and add the chopped bacon and the butter into the corn chowder. Stir everything together, taste for salt and pepper then serve.
