Crockpot Corn Chowder

Ingredients

  • 2 15 oz creamed corn
  • 2 15 oz corn drained & rinsed
  • 1/2 medium yellow onion diced
  • 2 medium russet potato peeled & diced
  • 2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 12 ounce evaporated milk
  • 2 tablespoon cornstarch
  • 16 ounce bacon chopped
  • 3 tablespoon butter

Instructions

  • To start, prep all the veggies. Empty the corn into the crockpot. Then add in the seasonings. Toss in the celery, potatoes and onion as well.
  • Pour in the chicken broth then stir everything together. Cook those ingredients on high for 3 hours.
  • The last hour mix the cornstarch and evaporated milk together to make a slurry then pour it into the recipe. Stir it in and comeback and stir in another 30 minutes.
  • Before serving, cook the bacon and add the chopped bacon and the butter into the corn chowder. Stir everything together, taste for salt and pepper then serve.
