Ingredients
 

  • 1.5-2 pound chicken breast
  • 1 medium yellow onion, sliced
  • 3 medium bell peppers, sliced

Fajita seasoning

  • 1.5 teaspoon chili powder
  • 1.5 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper

Instructions
 

  • To start, place the chicken breast in the crockpot.
  • Then, slice up the bell peppers and onion then add those on top of the chicken. Mix together the seasoning mix and pour it across the top.
  • Cover the crockpot and cook on high for 4 hours. You won't need to add water because the veggies will release water and the chicken. There will be more than enough at the end of the recipe.
  • When the chicken is finished cooking, it'll be fork tender. Shred the chicken and mix everything together so that the juices and the seasoning are even throughout the meal.
  • Lastly, serve with tortillas, fresh ingredients like tomato, salsa or even guacamole and enjoy.
