Ingredients

  • 1-2 pound chicken breast
  • 10 ounce can of cream of chicken
  • 16 ounce yellow rice

Instructions

  • Pour the cream of chicken soup into the bottom of the slow cooker.
  • Add the chicken breasts. Cover and cook on HIGH for 4 hours or LOW for 6 hours.
  • About 30 minutes before the chicken is finished, prepare the yellow rice on the stovetop according to the package instructions.
  • Once the chicken is finished cooking, chop or shred it to your preferred texture.
  • Add the cooked yellow rice to the slow cooker and stir it together with the chicken, cream of chicken soup, and cooking juices.
  • Allow the dish to cool slightly before serving.

Notes

  • It may look like there is not enough liquid when the chicken first goes into the slow cooker. The chicken releases juices as it cooks, which thin the cream of chicken soup.
  • For extra flavor and color, you can season the chicken with salt and pepper and sear both sides before adding it to the slow cooker.
  • The yellow rice is intentionally cooked separately. From experience, cooking regular yellow rice directly in the crockpot can result in uneven or mushy rice.
  • Chop or shred the finished chicken depending on the texture you prefer.
