Equipment

  • Crockpot

Ingredients

  • 1 pound ground beef 85/15
  • 3 medium russet potatoes, diced
  • 1 medium yellow onion, diced
  • 15 ounce can of diced tomatoes, drained & rinsed
  • 2 cups beef broth
  • 16 ounce velveeta cheese, cubed
  • 2 tablespoon ketchup
  • 1 teaspoon mustard
  • seasoning salt to taste

Instructions

  • First, you'll need to brown the ground beef and season with seasoning salt. Salt and pepper can work as well.
  • Now, after you remove the cooked ground beef from the pan add in the onions and cook until they are softened and translucent.
  • Next, in the crockpot add the cooked beef and the onion. Then, add in the diced tomatoes and potatoes then cover with the broth.
  • On high allow the soup to cook for 2 hours or low for 4-5 hours.
  • When that time is up, cube the velveeta cheese and add it into the crockpot. Allow 30 minutes for the cheese to melt into the broth. The cheese will look separated but stirring will fix that.
  • During this time cook and chop the bacon.
  • Lastly, add in ketchup and mustard then taste for seasoning.
