Crockpot broccoli cheese soup is the slow cooked, easy version of the classic, creamy cheddar soup with chunks of broccoli in an addictive cheesy broth.
Take the fresh broccoli and roughly chop it. For this recipe you are welcome to use shredded carrots or chop them from whole carrots.
Now, add the diced onion, broccoli, and carrots to the crockpot.
Mix the chicken broth and cornstarch. Then, pour it over the ingredients in the crockpot.
Turn the crockpot on high. The recipe will take about 3 hours to cook on high. For the low setting it will be possibly 4 hours because the veggies cook very quickly once everything is hot.
About 30 minutes before the recipe is finished, add in the garlic powder, cheese, and heavy cream. Mix everything together.
Lastly, add salt and pepper to taste before serving.
