Ingredients

  • 1 package 15 bean soup in the aisle with the beans
  • 6 cup chicken soup
  • 1 lb smoked ham hock
  • 1/2 medium yellow onion, diced
  • 1/2 teaspoon garlic powder
  • 15 ounce can of diced tomatoes, drained & rinsed
  • 1 tablespoon lemon juice or vinegar
  • 1 teaspoon chili powder

Instructions

  • To start, soak the beans according to the instructions on the packaging.
  • When you’re ready to cook, prep all the ingredients. Now, toss everything into the crockpot except the lemon and chili powder.
  • Cook on high for 6-8 hours. You do not want to cook on low. You’ll need to beans to reach a certain temperature and low  won’t work.
  • Test the beans for tenderness after 6 hours to see if you need more time.
  • Before serving stir in the squeezed lemon and chili powder. Serve and enjoy.
