Ingredients
 

  • 1 pound shredded chicken
  • 1/2 medium cabbage, sliced thinly
  • 1 medium yellow onion, diced
  • 4-5 cloves garlic, minced (depending on clove size)
  • 2 medium potatoes, washed & diced
  • 1 stalk lemongrass, diced
  • 4 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • salt & pepper to taste

Instructions
 

  • To start, you want to prep all the ingredients before starting. For the lemongrass you want to remove that hard root from the bottom first. Here is a quick YouTube video to help.
  • In a pot, sauté the diced onion and minced garlic. Once they have become fragrant toss in the chopped lemongrass.
  • Then, add in the diced potatoes, shredded chicken then pour the chicken broth over everything. Bring to a simmer.
  • Next, add the shredded cabbage on top then cover the pot. Cook the chicken cabbage soup for 20 minutes or until the cabbage has withered down. Be sure to stir at least once in the middle of the cooking time.
  • After the cabbage has withered season everything with salt and pepper to taste. Lastly, add in apple cider vinegar to boost all the flavors. Serve warm and enjoy.
