Take the puff pastries and cut the sheets into 4's. In a small bowl, mix together the egg and heavy cream, set aside.
Now, with the canned cherries, take a spoon full of cherries and place in the middle on one puff pastry sheet. Take a finger, dip it into the egg wash and spread a thin layer around the edges. Fold the puff pastry over and seal it. Then, crimp the edges with a knife.
Quick tip, try to get as many cherries as possible from the canned filling. Some brands give you more filling than actual cherries. After 1 or 2 turnovers, you'll have a feel about how much you need to fill the turnovers correctly and seal them.
Once all are sealed, brush the outside of the pastry with the egg wash. Then, place on a lined sheet pan and bake for 15-20 or when the outside is golden.
Allow to cool for 10-15 minutes before handling. Spread the icing, then enjoy.
