Ingredients
 

  • 2 sticks butter, softened (16 tablespoons)
  • 1/2 cup granulated sugar
  • 1.25 cup light brown sugar
  • 2 large eggs
  • 1 egg yolk
  • 2 teaspoon vanilla extract
  • 1.5 cup all-purpose flour (191g)
  • 1.25 cup bread flour (159g)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cup chocolate chips
  • 24 squares caramel candy

Instructions
 

  • Preheat the oven to 350℉.
  • Now, cream the butter and both sugars together on a high speed for about 2 minutes. Next, mix in the eggs, yolk and vanilla extract. In another bowl, add in the flours, baking powder, baking soda, cinnamon and salt. Now, combine the dry and wet ingredients. Do not over-mix. When just combined, fold in the chocolate chips.
  • Now, grab a scoop of cookie dough. Place the caramel in the center, next fold the cookie dough around it. You will need a large cookie dough scoop. If you only have a small one, simple use 2 scoops.
  • Once folded around the caramel, place the cookie on a line sheet pan. Make all the cookies you plan to bake then place in the oven for 12 minutes. When done, allow the cookies to cool before serving, enjoy.
