Caprese Pasta Salad

Ingredients

  • 1 pint cherry tomatoes, halved
  • 1/4 cup basil, chopped
  • 8-12 ounces mozzarella pearls

Dressing

  • 1/4 cup olive oil or any neutral tasting oil
  • 3 tablespoon balsamic vinegar
  • 1 tablespoon apple cider vinegar
  • 2 teaspoon dried oregano
  • 1 teaspoon salt, add more to taste
  • 1/2 teaspoon black pepper

Instructions

  • Prep, all of the ingredients first and while prepping the veggies, place the pasta on the stove. Prepare the pasta according to package instructions.
  • In a bowl, mix together all the ingredients for the dressing.
  • In a large salad bowl, add the halved tomatoes and the cheese. When the pasta is done, drain the water and add no more than a tablespoon of oil. This will keep it from sticking as it cools.
  • Once the pasta has cooled, add it to the cheese and tomatoes. Lastly, toss the dressing in the caprese pasta salad then add salt to taste. Serve and enjoy.
