First, make the meatballs them allow them to sit for 15 minutes to allow the breadcrumbs to work and bring the mix together.

In a large pot or Dutch oven, add a little oil and turn the heat to medium-high. Sear one or two sides of each meatball then remove from the pot.

Once the color is reached toss in the chopped veggies then pour in the chicken broth. There will be a lot of steam but that’s fine. Bring the pot to a simmer and allow the veggies to cook for about 10 minutes before adding the meatballs. Add in the Cajun seasoning now.
After adding the meatballs allow about 10-15 minutes on a low simmer and the pot is covered. Remove a meatball to test for doneness. Once the meatballs are done turn off the heat.
Serve over mashed potatoes or rice and enjoy.
