Ingredients
 

Meatballs

  • 1 pound ground beef 85/15
  • 1 pound ground Italian sausage
  • 2 large egg
  • 1/4 cup milk
  • 1/2 cup plain breadcrumbs
  • 1 tablespoon cajun seasoning

Recipe

  • 8 tablespoon butter
  • 1 cup all-purpose flour
  • 1 medium yellow onion, diced
  • 2 rib celery, minced
  • 4 cloves garlic, minced or pressed
  • 4 cup chicken stock
  • 1 tablespoon cajun seasoning
  • 4 sprigs thyme

Instructions
 

  • First, make the meatballs them allow them to sit for 15 minutes to allow the breadcrumbs to work and bring the mix together.
  • While waiting, prep all the other ingredients.
  • In a large pot or Dutch oven, add a little oil and turn the heat to medium-high. Sear one or two sides of each meatball then remove from the pot.
  • Lower the heat to medium then toss in the butter. Once the butter has melted add in the flour and begin to whisk. Whisk the flour for about 10 minutes. You want the color to be chocolate milk. It will quickly favor creamed coffee, but you want something darker than that. A easy sign is the super nutty smell that will be coming from the pot mixed with the color.
  • Once the color is reached toss in the chopped veggies then pour in the chicken broth. There will be a lot of steam but that’s fine. Bring the pot to a simmer and allow the veggies to cook for about 10 minutes before adding the meatballs. Add in the Cajun seasoning now.
  • After adding the meatballs allow about 10-15 minutes on a low simmer and the pot is covered. Remove a meatball to test for doneness. Once the meatballs are done turn off the heat.
  • Serve over mashed potatoes or rice and enjoy.
