Buffalo chicken meatballs are a delicious, bite sized meatball recipe that can serve as an appetizer or an entire meal. Dressed in a creamy buffalo sauce you can top these off with blue cheese dressing. A great party food or potluck item that everyone can enjoy!
In a mixing bowl add in ground chicken, breadcrumbs, egg, buffalo sauce and seasoning mix. Mix well then cover and place in refrigerator for 30 minutes to an hour.
Preheat oven to 400°F. After, form meatballs. I used a meatball maker and got 20 meatballs out of this recipe. In a frying pan add a shallow amount of oil. Sear two sides of each meatball. Just sear, don't try to cook it through.
Next, bake meatballs for 15 minutes to finish cooking them through.
While meatballs are baking make sauce. In a small pot on medium/high heat add in butter and melt to make a roux.
Sprinkle flour over melted butter and whisk until smooth. Continue to whisk while adding in milk and buffalo sauce. Continue to whisk until evenly combined then remove from heat.
Once meatballs are done in the oven give them a toss in the sauce then serve.
