Ingredients

  • 1/2 loaf baguette bread
  • 8 ounce mozzarella
  • drizzled olive oil on bread
  • drizzled balsamic glaze for finishing

Mix

  • 1 pint cherry tomatoes, halved
  • 1/2 cup chopped basil
  • 2 tablespoon olive oil
  • salt & pepper to taste

Instructions

  • Preheat the oven to 400F. Slice the bread and drizzle olive oil on the slices and spread them out.
  • Cook the bread until it starts to get golden and toasty. Add the sliced cheese as soon as it comes from the oven to the slices.
  • In a large bowl, halve the cherry tomatoes and chop the basil. Then toss in them both in olive oil and add salt and black pepper to taste.
  • On top of the cheese, place the tomato basil mix. Plate them in an arrangement then drizzle the balsamic glaze across each piece of toast. Enjoy.
