Ingredients
 

  • 1 cup zucchini, grated (180g, 1 medium to large zucchini)
  • 1 cup blueberries
  • 2 large egg
  • 3/4 cup vegetable oil
  • 2 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1 3/4 cup all-purpose flour (220g)
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions
 

  • Preheat the oven to 350℉.
  • Grate the zucchini. You do not have to squeeze it or anything. In a bowl, whisk the eggs, vegetable oil, vanilla extract and the sugar together.
  • In another bowl, mix the flour, baking soda and salt together. Combine the dry and wet ingredients. Then, fold in the grated zucchini and the blueberries.
  • Pour the batter in a lined loaf pan, then bake for 50 minutes. Ovens will vary, start checking the bread around the 40 minute mark. When finished, allow the bread to cool before slicing and serving.
