Equipment

  • 9x13 baking pan

Ingredients

  • 75 ounces peaches 5 15oz cans drained
  • 6 ounce blackberries
  • 1/2 cup light brown sugar
  • 3 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Topping

  • 257 grams all-purpose flour 2 cups + 2 TB
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 tablespoon butter melted
  • 1 cup milk
  • 6 ounce blackberries

Instructions

  • Preheat the oven to 350℉.
  • Drain the peaches. Then, mix the peaches and blackberries together. Add the brown sugar, cinnamon, cornstarch, salt with the peaches and blackberries and mix everything until it's even. Then, add to the baking dish.
  • In another bowl, add in the flour, sugar, baking powder, salt, milk and the melted butter. Mix until it's smooth then fold in the remaining blackberries. Scoop the mixture on top of the fruit in the baking pan and spread it out a little. It doesn't have to spread out perfectly because it'll do that while baking.
  • Place the pan in the oven and bake for 1 hour allowing the top to turn a light golden brown. Allow the cobbler to cool 20-30 minutes then serve with a scoop of vanilla icream.
