Make this first because you'll need the oven. Preheat the oven to 275℉
Place 4 slices of bread in the oven for 7 minutes. Flip then repeat another 7 minutes. The bread should be dry and not golden.
In a food processor or use your hand and bread the bread up into smaller bits. Toss the bread in the melted butter and salt then set to the side.
Casserole
First, mix all the ingredients together for the sauce then cover it and place in the refrigerator. Dice the onion and potatoes. Keep the skin but wash the potatoes first before dicing.
Next, in a pan on medium high heat add a little oil then brown the ground beef. Season with salt and pepper. After the ground beef is cooked remove from pan and add in the onion and diced potatoes.
Then, season lightly and cook enough for the onions to soften and the potatoes to have some golden sear marks on them. They will not cook all the way through on the stove top so don't try.
After those are done add the cooked ground beef, onion and potatoes into a 8x8 baking dish. Cut up cubes of velveeta cheese then mix it in with the contents in the casserole dish.
Next, add the prepped breadcrumbs across the top. Place in the preheated oven for 25 minutes to make the bread golden brown. Remove from the oven and allow to cool a bit.
Lastly, top the casserole dish with shredded lettuce, pickles and the sauce you made earlier, serve.
