Baked Sweet Potato Slices

Baked sweet potato slices are a fun side dish to make with little work for tender, naturally sweet slices of sweet potatoes from the oven.

Ingredients
 

  • 2 pound sweet potatoes, sliced
  • 1/4 cup olive oil (any cooking oil will work)
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon rosemary, minced

Instructions
 

  • First, preheat oven to 350℉. Wash the skin on the sweet potatoes.
  • If you have a vegetable slicer perfect, if not slice the sweet potatoes as evenly as possible. You want them ¼ inch in thickness or less.
  • In a large bowl, toss the sliced sweet potatoes in oil and the seasonings. Now, arrange the sliced sweet potatoes in a baking dish standing them up.
  • Cover the baking dish with aluminum foil then place in the preheated oven for 30 minutes.
  • After the time is up, remove the foil. Place back in the oven then raise the temperature to 400F and bake a remaining 20 minutes.
  • Lastly, remove from oven, cool then serve.
