Preheat the oven to 400℉.
In the skillet, cook the bacon until crispy. Remove the bacon and add in the cubed ham. You're just going to sear the ham in the bacon grease then remove it once it has some color.
There should be plenty of bacon grease left, now add in the thawed shredded hash browns. Season them a little then pat them down in pan and leave them there about 5 minutes on medium high heat.
After 5 minutes, flip them. If the pan looks dry add a little vegetable oil (about 2 tablespoons) to the bottom of the pan to help the potatoes crisp. While cooking whisk together the eggs with the sour cream and season them with salt and pepper.
Once the bottom of the hash browns are browned and crisp, add 1/2 cup of cheese on top. Then, pour the egg mixture on top. Next, sprinkle the chopped bacon, ham and the rest of the cheese on top. Now, place the skillet in the oven.
Bake for 10-15 minutes to allow the egg to puff up and cook through the center.
Once the eggs are done, remove and allow to cool a bit before serving, enjoy!
