In a bowl, mix the eggs, vegetable oil, brown sugar and the milk. In a separate bowl, add int he flour, baking powder, baking soda, salt and the apple pie spice. Now, combine the dry and wet ingredients.
Fold in the apples, syrup and the oats. Scoop the batter into the lined muffin pan. Then, place into the oven and bake for 15-18 minutes. Baking times will vary.
Once finished, allow to cool a bit before serving and you can serve them while they are still warm or at room temperature.
