Ingredients

  • 8 tablespoon butter, softened 1 stick
  • 3/4 cup light brown sugar
  • 1/2 cup applesauce 4oz
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour 120g
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoon apple pie spice
  • 1.5 cup rolled oats
  • 1 apple, diced small & core removed

Instructions

  • Preheat the oven to 350℉.
  • In a bowl, cream the butter and the brown sugar together. Next, mix in the applesauce and vanilla. Separately, add the flour, baking soda, baking powder, apple pie spice and the salt to a bowl. Combine the dry and wet ingredients. Now, fold in the oats and the diced apple.
  • Using a large cookie scoop, scoop the cookie dough onto a line sheet pan. Do not crowd the cookies, leave room for them to spread.
  • Place in the oven and bake for 10 minutes. Remove from the oven and allow to cool fully before serving, enjoy.
