First, remove the chicken breast from the package and carefully butterfly the chicken. Here is a video reference for help.
Place a piece of plastic wrap over the chicken that's been butterfly and use a meat tenderizer or rolling pin and flatten the chicken out until it has spread thinner.
Next, take a slice of ham and lay it over the chicken then top with a slice of Swiss cheese. Grab a piece of plastic wrap and lay the chicken on top. Roll the chicken closed tightly then wrap the plastic around the chicken tightly as well. Place the wrapped chicken in the fridge for an hour or even better until the next day. Here's a videoshowing how to roll the chicken but without the plastic. See tips for why to use plastic.
This will be the perfect time to make the sauce for the chicken cordon bleu.
When ready to cook, set up a station for breading and an egg wash. Remove the chicken from the plastic wrap and you'll notice it holds it's shape well. Roll the chicken in the egg wash then the breadcrumbs. Set the breaded chicken on a plate for 10-15 minutes after they are all done.
Preheat the air fryer to 375℉.
Add toothpicks on the sealed side of the chicken for extra security. Place the chicken in the air air fryer.
Cook for 18 minutes and flip the chicken halfway through. Allow to rest 5 minutes when finished then slice and enjoy.
