Ingredients
 

  • 8 ounces leftover turkey, chopped
  • 1 cup white rice, dry
  • 2 cans cream of chicken
  • 1/2 cup sour cream
  • 1 sleeve ritz crackers
  • 4 tablespoon butter
  • 1.5 cup frozen peas & carrots, thawed
  • 1 cup shredded cheddar cheese

Instructions
 

  • First, you'll need to make the rice according to the directions on the package and thaw the frozen peas and carrots. Plus, mix together the butter and the ritz crackers.
  • Preheat the oven to 375℉.
  • Now, chop the leftover turkey well so that it is even through the entire casserole.
  • Next, combine the cream of chicken and sour cream.
  • Then, in the baking dish combine the cream sauce, chopped chicken, veggies and the rice together. Next, smooth it out in the baking dish.
  • Top the baking dish with cheese. Now, cover the casserole with the butter ritz crackers.
  • Bake in the preheated oven for 20-25 minutes or until the top is golden. Allow the casserole to cool then serve.
