10ounce diced tomatoes and green chilis(rinsed & drained)
32ouncebeef broth(sub with water)
1tablespoonall purpose flour(sub with small can of tomato paste)
10ouncemixed vegetables(frozen)
2tablespoonworcestershire sauce
1tablespoonapple cider vinegar
salt & black pepper to taste
Instructions
To start, you'll need a large pot. Also, prep all the ingredients to have them ready because in the beginning the recipe will move fast.
In the pot on medium high heat add the chopped bacon. Cook the bacon completely and leave the leftover fat in the bottom of the pan. Remove the cooked bacon and add in sliced smoked sausage.
Then, cook the sausage a bit to brown a few pieces and remove it. Next, add in the raw ground beef and season with salt and black pepper.
Cook the ground beef all the way then remove the beef from the pan. Toss in the diced onion and Rotel diced tomatoes and green chilis.
Season with salt and black pepper. Once the onions are translucent add in the minced garlic cloves. Allow them to cook for a minute.
Then, sprinkle the flour across the veggies. Cook the flour at least 30 seconds to get rid of the raw flavor. Then, lower the heat.
Add back in the sausage, ground meat but also put in the corn, pinto beans, frozen mixed vegetables, diced potatoes. Finally, add in the beef broth.
Give everything a stir. Pour in the Worcestershire sauce and apple cider vinegar. Bring pot to simmer than cover for one hour.
Lastly, allow the cowboy stew to cool a bit before serving. But, before serving be sure to taste for salt and black pepper. You will need to add those into the recipe. Also, be sure to add the cooked bacon into the recipe right before serving for the best results.
