Sweet Potato Honey Bun Cake

Sweet potato honey bun cake takes something that is already mind blowing to another level. This simple cake wraps flavors of sweet potato with cinnamon, pecans and brown sugar then finished with thin layer of icing.

Equipment

  • 9x13 baking pan

Ingredients

  • 1 cup mashed baked sweet potato about 2 medium sized
  • 4 large egg
  • 1 cup sour cream
  • 3/4 cup vegetable oil
  • 1 yellow box cake mix

Center Swirl

  • 1 cup light brown sugar
  • 2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup pecans, chopped

Icing

  • 1.5 cup powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  • Prep the sweet potatoes first. After baking, allow them to cool. Remove from skin and mash out a cup for the recipe.
  • Preheat the oven to 350℉.
  • In a bowl, mix together the sweet potato and eggs. Then, add in the sour cream. Lastly, mix in the yellow box cake and stir until everything is combined.
  • In the baking pan, pour in half the batter. Then sprinkle the mix of the spices, pecan and brown sugar. Pour the remaining batter on top. Now, swirl everything together a little, don't mix, just a swirl.
  • Place in the oven and bake for 30-35 minutes or until fully cooked in the center.
  • When finished, remove from the oven and allow to cool.
  • While cooling, mix and pour the icing on top of the cake and spread it evenly. Once the cake is cool, you're ready to serve and enjoy.
