Sweet potato honey bun cake takes something that is already mind blowing to another level. This simple cake wraps flavors of sweet potato with cinnamon, pecans and brown sugar then finished with thin layer of icing.
1cupmashed baked sweet potato(about 2 medium sized)
4largeegg
1cupsour cream
3/4cupvegetable oil
1yellow box cake mix
Center Swirl
1cuplight brown sugar
2teaspooncinnamon
1/4teaspoonnutmeg
1cuppecans, chopped
Icing
1.5cuppowdered sugar
1/4cupmilk
1teaspoonvanilla extract
Instructions
Prep the sweet potatoes first. After baking, allow them to cool. Remove from skin and mash out a cup for the recipe.
Preheat the oven to 350℉.
In a bowl, mix together the sweet potato and eggs. Then, add in the sour cream. Lastly, mix in the yellow box cake and stir until everything is combined.
In the baking pan, pour in half the batter. Then sprinkle the mix of the spices, pecan and brown sugar. Pour the remaining batter on top. Now, swirl everything together a little, don't mix, just a swirl.
Place in the oven and bake for 30-35 minutes or until fully cooked in the center.
When finished, remove from the oven and allow to cool.
While cooling, mix and pour the icing on top of the cake and spread it evenly. Once the cake is cool, you're ready to serve and enjoy.
