Ingredients

  • 2 pound Granny Smith apples about 3-4 medium apples
  • 3 tablespoon salted butter
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  • Peel, core, and slice the apples as evenly as possible.
  • Melt the butter over medium-high heat.
  • Add the lemon juice, cinnamon, brown sugar, and granulated sugar; stir together.
  • Add the apples and keep the skillet over medium-high heat.
  • Turn the apples about every 3 minutes.
  • Cook for about 10–15 minutes, until fork tender.
  • Remove from the heat and let them cool slightly; the sauce will thicken as it cools.

Notes

  • Granny Smith apples are recommended because their tart flavor balances the sweetness and their firm texture holds up well during cooking.
  • Peel the apples for the best finished texture.
  • Heat control is important. Cooking too low can make the apples overly soft before the sauce reduces, while cooking too hot can reduce the sauce before the apples are tender.
  • Stay close to the skillet near the end because the sauce can thicken quickly once the excess moisture has evaporated.
