Ingredients
 

  • 2 pound russet potatoes, peeled & sliced
  • 1/2 medium yellow onion, sliced
  • 4 slices bacon, chopped
  • 1/2 cup chicken stock or water
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • salt to taste

Instructions
 

  • First, peel and slice the potatoes like scallops. Do not make the cuts super thick. Also, chop up the bacon and slice the onion as well.
  • You'll need a pot or pan with a lid. Now, in that pan add the bacon and cook the bacon all the way through on a medium high heat but not too hot. Remove the bacon and all the bacon fat you want to use it.
  • Next, add in the sliced onion and potatoes. Sear both ingredients until they start to wither. Then, lower the heat to low.
  • Now, add in all your seasonings and toss the bacon back in. Pour in the water and cover the lid.
  • Cook the the potatoes for about 25-30 minutes on that low heat and occasionally come back to give them a stir. The water will mix with the potatoes and thicken everything from the natural starches. 
  • Once the potatoes are tender the recipe is done. Allow to cool a bit then taste for salt before serving.
