Ingredients

  • 12 corn tortillas street taco tortillas
  • 1 pound ground beef
  • 2 pack taco seasoning
  • 4 ounce Velveeta cheese
  • 10 ounce Rotel tomatoes & green chilies
  • cooking oil spray
  • 1 cup shredded Mexican cheese
  • 3/4 cup water

Instructions

  • Preheat the oven to 425℉.
  • Brown the ground beef in a large skillet.
  • Add the Rotel tomatoes and green chilies, both packets of taco seasoning, and ¾ cup water. Stir everything together and bring the mixture to a simmer.
  • Continue simmering until the taco seasoning has thickened around the beef.
  • Add the Velveeta and stir until completely melted into the beef mixture. Turn off the heat.
  • Lightly coat a large sheet pan with cooking spray.
  • Arrange the corn tortillas across the sheet pan and divide the shredded Mexican cheese over the tortillas.
  • Place the tortillas in the oven for 3–4 minutes to warm them and begin melting the cheese.
  • Remove the sheet pan from the oven and spoon the beef mixture onto one side of each tortilla.
  • Carefully fold each tortilla over the filling and press down gently with a spatula.
  • Bake for 10 minutes.
  • Carefully flip each taco and bake for another 10 minutes, or until both sides are crispy and golden.
  • Remove from the oven and allow the tacos to cool slightly before serving.

Notes

  • Street taco-size corn tortillas are used for this recipe.
  • Warming the tortillas before filling makes them easier to fold without cracking.
  • Use only a light coating of cooking spray so the tortillas crisp without becoming greasy.
  • Flipping the tacos halfway through baking helps both sides brown and crisp.
  • Some filling may escape while flipping; work carefully with a spatula.
  • Add guacamole, pico de gallo, salsa, cilantro, or other fresh toppings after baking.
