Sautéed Sweet Potatoes

Ingredients

  • 1 pound sweet potatoes, peeled & cubed
  • 1 tablespoon chipotle paste
  • 1 tablespoon light brown sugar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt to taste
  • vegetable oil for cooking

Instructions

  • First, peel and dice the sweet potatoes.
  • Then, in a frying pan with a lid, add in some vegetable oil on medium heat. When hot, toss in the sweet potatoes then cover with the lid.
  • Come back every 5 minutes or so and turn and move around the sweet potatoes using a smooth. When you can push a fork or toothpick into the largest sweet potato with a little resistant do not add the lid back on.
  • Very important, do not cook the sweet potatoes until they are mushy. You want to be able to turn them and move them in the pan without them smashing.
  • Now, add in the chipotle paste and other seasonings. Mix them around with the pan. Cook for about 3-5 minutes to give everything to work together then turn off the stove.
  • Place the sweet potatoes on a plate then serve.
