Sautéed sweet potatoes are the perfect fall side dish or anytime of the year when you want a healthier option that caramelizes with it's natural sugars and is flavor packed.
Then, in a frying pan with a lid, add in some vegetable oil on medium heat. When hot, toss in the sweet potatoes then cover with the lid.
Come back every 5 minutes or so and turn and move around the sweet potatoes using a smooth. When you can push a fork or toothpick into the largest sweet potato with a little resistant do not add the lid back on.
Very important, do not cook the sweet potatoes until they are mushy. You want to be able to turn them and move them in the pan without them smashing.
Now, add in the chipotle paste and other seasonings. Mix them around with the pan. Cook for about 3-5 minutes to give everything to work together then turn off the stove.
Place the sweet potatoes on a plate then serve.
