Ingredients

  • 8 ounce Oaxaca cheese, grated
  • 4 ounce Monterey Jack cheese, grated
  • 6 ounce pork chorizo
  • 1/2 medium onion, diced
  • 2 clove garlic, minced
  • 1 medium poblano pepper, diced

Garnish

  • 1 roma tomato
  • 1 tablespoon cilantro, chopped

Instructions

  • Prep all of the ingredient first
  • Preheat oven to 350°F
  • In the cast iron skillet on medium high heat remove the chorizo from the casing then plan in the skillet. No need to add oil there is enough fat in the chorizo
  • Cook the chorizo all the way. Remove from pan and leaving the oil and lower the heat to medium.
  • Add onions and poblano pepper in the pan. Cook until peppers have softened and onions are translucent. When that happens toss in the minced garlic and cook until slightly browned and fragrant. Remove from heat.
  • Remove the content from the pan. Layer the ingredients. Cheese, onions, garlic and pepper, half chorizo, the rest of the cheese then sprinkle the rest of the chorizo on top.
  • Place in preheated oven for 20 minutes
  • While quedo fundido is baking dice the tomato and chop the garlic. You don't have to use this but the fresh ingredients are a nice touch.
  • Remove from oven then allow to cool 5 minutes and top with garnish. Serve with tortillas.
