First, chop up the pistachios then mix together the other ingredients for the crust. Set to the side. Preheat the oven to 375℉.
Now, season the salmon with salt and pepper. In a frying pan, add a little oil and on medium high heat sear both sides of the salmon. You only want to give it some color because it'll finish cooking in the oven.
Remove the seared salmon and place on a sheet pan. Brush mayo or mustard across the tops then carefully press the crust on the tops.
Place in the oven and bake for 10-12 minutes. Keep an eye on it to avoid burning the pistachios.
Once finished cooking allow to cool a bit but not too long since seafood cools really fast. Enjoy.
