Ingredients

  • 1 pound salmon
  • salt & pepper to taste
  • mustard or mayo to help crust stick

Crust

  • 1/4 cup pistachio, roughly chopped
  • 2 tablespoon plain breadcrumbs
  • 2 tablespoon butter
  • 1/2 teaspoon salt

Instructions

  • First, chop up the pistachios then mix together the other ingredients for the crust. Set to the side. Preheat the oven to 375℉.
  • Now, season the salmon with salt and pepper. In a frying pan, add a little oil and on medium high heat sear both sides of the salmon. You only want to give it some color because it'll finish cooking in the oven.
  • Remove the seared salmon and place on a sheet pan. Brush mayo or mustard across the tops then carefully press the crust on the tops.
  • Place in the oven and bake for 10-12 minutes. Keep an eye on it to avoid burning the pistachios.
  • Once finished cooking allow to cool a bit but not too long since seafood cools really fast. Enjoy.
