Ingredients

  • 1 pound Yukon gold baby potatoes
  • shredded parmesan to taste

Seasoning (mix together)

  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder

Instructions

  • Start by bringing a pot of water to boil then cook the potatoes until fork tender, about 15-20 minutes. Turn the oven on broil.
  • Next, place the boiled potatoes on a sheet pan then lightly using the bottom of a plate or glass press down on the potatoes until they smash a little bit.
  • Now, brush the potatoes with butter then sprinkle the seasoning mix across the tops of them. Then, add on the shredded parmesan cheese.
  • Place in the under the broiler for about 10 minutes. This will melt and brown the cheese and make the skins crispy as well.
  • Lastly, when the cheese has melted and browned a little remove from the oven and allow to cool before serving, enjoy!
